Chocolate Muffin With Nutella Filling


Im not a chocolate fan...I love citrus cake n chiffon cake..but this lovely chocolate muffin with nutella filling frm a recipe book tt i bought really make my day..its sooo sinful!!!.♥♥




Ingredients
200g Plain flour
25g cocoa powder
1tbsp baking powder
110g light brown sugar
2 eggs
100ml sunflower oil
225ml milk
75g chocolate chips
Nutella 

Preheat oven to 200C..

Sift the flour, cocoa powder n baking powder into  mixing bowl..stir in sugar..
Whisk together the eggs n oil in a separate bowl untill frothy, then slowly whisk in the milk
stir into the dry ingredients untill just blended. stir in the chocolate chips.

Spoon the batter into the muffin tray to half-fill. Place about 1tsp of Nutella on top each muffin

then cover with the rest of the mixture. Bake for 15-20min untill rise and springy to touch..

I love to eat muffin when its hot.. 










Kuih Bom Bijan



Seperti biasa..asal ptg jek anak2 dan suami mesti cari something to munching..sometime naik pening kepala nak fikir kan ape nak buat untuk minum ptg... anak2 pulak kalau ditanya, fuhhh mcm2 dia nak..they think im superwomen agaknya..aduhhhh..
So terjadilah kuih bom bijan..i love to make something tt easy, fast n yummy..traditional malay kuih is the best.. :-)




Bahan-bahan

3 cawan tepung pulut
1 cawan tepung beras
11/2 cawan -air gula suam2

Bijan untuk di golek-golekan dgn doh yg di isikan inti

Inti Kelapa

1/2 biji kelapa parut putih
1/2 cawan air
10 sudu gula merah atau gula perang
7 sudu gula
daun pandan
1 sudu tepung gandum untuk jadikan inti kelapa tadi tidak berderai

Cara-cara

Tepung pulut dan tepung beras disatukan..dan masukan air sedikit2  ke dalam tepung tadi
hingga menjadi doh..(jgn terlalu keras atau lembut)
tutup dgn cling film..ketepikan..

Untuk inti kelapa..
Masukan 1/2 cawan air kedalam kuali bersama gula merah dan gula putih (castor sugar)
Apabila air dah mendidih masukan kelapa tadi gaul hingga sebati..
kacau hingga adunan menjadi agak kering sedikit setelah itu masukan tepung gandum kacau dan sejukakan..

Sapu tapak tangan dgn sedikit minyak ..
kemudian ambil doh tadi bolakan dan isikan inti kelapa..lepas tu golek kan pada bijan dan goreng hingga kekuningan..

CINNAMON PULL APART BREAD
Recipe: Joy the Baker


For the Dough 
2 3/4 cups plus 2 tbs tepung
1/4 cup gula kasar
2 1/4 sudu kecik yeast
1/2 sudu kecik garam
4 tbs butter
1/3 cup susu penuh krim
1/4 cup air
2 biji telur (size A)
1 sudu kecil Vanilla extract

For the Filling
1 cup brown sugar 
2 sudu kecil serbuk kayu manis (cinnamon)
1/2 sudu kecil serbuk buah pala (nutmeg) (i admit this coz no stock)
4 tbs butter - dicairkan sehingga menjadi brown


Cara:
Dalam mangkuk yang besar, campurkan 2 cups tepung, sugar, yeast, and salt. Ketepikan

Pukul telur, ketepikan

Dalam small saucepan, campurkan susu dan mentega, panaskan sehingga mentega cair. Ketepikan dan masukkan air dan vanilla extract. Biarkan seketika sehingga mixture menjadi suam2 kuku.

Tuangkan mixture susu dan mentega tadi kedalam bahan kering, kacau dengan senduk. Masukkan telur dan kacau lagi. Add 3/4 cup tepung, dan uli sehingga sebati. The dough will be sticky. Masukkan dough kedalam mangkuk besar yang telah di gris dengan butter/minyak. Tutup dengan kain atau cling wrap, biarkan sehingga dough naik 2 kali ganda.

note : dough yang the naik, boleh disimpan di dalam peti semalaman, dan diguna keesokan hari. (I skipped this)

Sementara menunggu dough naik, campurkan gula, serbuk kayu manis dan serbuk buah pala di dalam mangkuk

Bila dough dah naik 2 kali ganda, bolehla dimasukkan kedalam oven yang telah dipanaskan.

Place a rack in the center of the oven and preheat to 350 degrees F. Place loaf in the oven and bake for 30 to 35 minutes, until the top is very golden brown. The top may be lightly browned, but the center may still be raw. A nice, dark, golden brown will ensure that the center is cooked as well.

Remove from the oven and allow to rest for 20 to 30 minutes. Run a butter knife around the edges of the pan to loosen the bread and invert onto a clean board. Place a cake stand or cake plate on top of the upside down loaf, and carefully invert so it’s right side up. Serve warm with coffee or tea.

All about 2012

Its already 2013!!!!
Its not to late for me to say Happy New Year!!!
Haizzzz its been so long tt i hv not blogging..im sooo lazy to on my laptop coz it was sooo slow n sometime
my laptop hiccup n i hv to stop restart again..
No matter what i still miss blogging..so many things happen the year of 2012..

First.. my dotter Nurul Amirah pass her PSLE in good result..Im a proud mother!!! Happy banget..hehehe..
Second..Alhamdullilah i rcvd more n more order..syukur kepada allah kerana memberi ku rezeki..
tapi penatnya mintak ampun..ape2 pun i hv to be strong..Sometime mcm nak surrender pun ada..mana dgn rumah nak kemas, masak, anak2..aduuhhhhh..Third ..2012 will be no holiday for our family..coz hubby says we have to save money for our long vacation to Aussie on June 2013 coz he already plan tt he wanted to bring us to GoldCoast, Sydney & Melbourne Insyaallah.. :-) Kadang2 stress.com jugak coz terperap jek pat dlm negeri..hehehee..sacrifice tts all i hv to say..i know tt he work hard for our family n i hv to respect his decision..So we spent our free time explore our country..

Nasi Lemak Pandan

Nasi Lemak Pandan

Hari ni rajin sikit lah..Pagi2 ku dah bangun msk..sebelum jam 8 pagi semua dah selesai..Sempat cik abg kita bawak bekal untuk mkn tengahari di tempat kerja..Anak2 semua dah ke sekolah..only left my lil bambam yg lagi nyenyak tido..hehehe..maklumlah sekolah ptg so bangun pun lambat..
Smlm duk fikir nak msk ape..akhirnya msk Nasi Lemak Pandan simple janji sedap..jom semak resepi yg tersangat lah mudahnya...

Bahan-bahan:

3 cawan Beras
Santan 1 pkt 500ml
Daun pandan
Pandan paste (aff cuma letak 2 titik jek tak nak lah hijau sangat
cuma nak aroma nya jek)
3 ulas bawang putih  - titik
4 biji bawang merah kecil - hiris

Caranya:

Tumis bawang merah, bawang putih dan daun pandan bila dah naik aroma nya masukkan beras
kacau sekejap dan masukan santan, garam, air dan pandan paste...masak seperti msk nasi biasa..


Lauk nya;
Sambal Tumis Sotong, Ikan selar besar, Ayam goreng, Fish Fillet, Telur Dadar
Kacang buncis goreng dan Timun

Egg Tart Portuguese

Petang tadi sempat buat kan anak2 Egg Tart..they always ask me to make..selalunya tak da masa langsung..Thought of nak post resepi2 yg pernah buat..tapi tak palah post yg ni dulu..when i hv time then bolelah post resepi2 yg lain..Resepi ni Aff dpt dari mana pun dah lupa..banyak sangat resepi yg Aff tulis..tapi tak pa..janji resepi2 ni tak mengecewakan..u shuld try tis Egg tart shiiioookkkk!!!!




Egg Tart Portuguese

Pastry:
Ingredients:

400g Plain flour
50g Unsalted butter    (A)
1/8 tsp Fine salt
220g Water

300g Pastry margarine   (B)

Method:
Mix (A) to form a smooth dough. Let it rest for 15mins.
Roll out the dough into cross shape with the centre thicker and the four limbs thinner.
Place the pastry margarine onto the centre of the dough. Wrap it up.
Roll out the dough into a 10mm thickness and fold once. Let it rest for 15mins. 
Turn the dough 90 degrees. Repeat step (4), four more times.
Roll out the dough into 3-mm thick. Cut the sheet into half.
For one of the half, roll it up like swiss roll. Chill till firm.
For the other half, fold them like an envelope and refrigerate for future use.

The Filling:

200ml whipping cream
300ml milk
3 eggs
3 egg yolk
80g sugar (u can add more if u like it to be more sweeter)
Vanilla essense

Whisk egg n sugar then add whipping cream, milk & vanilla essence

Divide the puff pastry into 24 portions. Flatten the pastry and roll it into about 3-mm thick. Press onto the tart moulds.
Pour the fillings into the pastry tarts from step 
Then bake at 200C for 20 mins on the centre rack. (You may place it at the lower rack. However, if there are no caramelised dots on the egg custard, move the baking tray upwards to let the tart surface take up more heat to create the caramelized dots. I baked mine on the top 2nd rack and it caramelised the whole custard!)

Chocolate Cupcake With Coconut Buttercream Frosting

This is back date entry on 16th Jan..I bake tis cake for my dad to bring for his collague friends to celeb his birthday with his friends..feedback from them..they like the cake sooo much..
Im glad tt they like the cupcake..:):)
The recipe i got it from Kak Ummi (Aff minta copy & paste eik kak ummi)
for the frosting i just whip ikut citarasa sendiri jek..janji sedap kan kan kan..:):)

 Bahan:-
1 cawan tepung kek/tepung gandum*
1 sudu teh serbuk penaik * (digaul dan diayak 3x)
1 cawan gula halus
2 biji telor gred A
125 gm butter
1 sudu teh esen vanila
1/2 cawan serbuk koko *
1/2 sudu teh nescafe *
1/4 cawan gula halus *
1/2 cawan air panas *
1/4 cawan susu cair * (* disatukan menjadi pes coklat)

Frosting:
Butter
Vannilla Essence
Kelapa Kering
Icing Sugar
Chocolate flavour
